ah almost Thankgsiving, that time of year again...here we go, you know the drill

feel free to pick as many of your favorites as you wish
Anything other than stuffing is the wrong answer. Unless of course you are talking about non main stream sides or entrees.

Italian family made stuffed shells to start the day. I still make a small tray. But I have gotten into making a Lechon asado (Cuban pulled pork) as another protein alternative to turkey. Thing is insane. And better 3 days later for leftover paninis.

As it should. It's very versatile too. It doesn't have to be plain. My favorite is hot Italian sausage and dried cranberries (which come back to life when hot). My youngest sister once told me she was going to make it with pineapple and my initial thought was that sounds awful. It was wonderful!! In front of everyone, I apologize to her and she asked why. I admitted to her that I thought it would be terrible. Everyone laughed and then some others admitted thinking the same thing! 🤣🤣

What variations do any of you make??

i leave the stuffing to my sister. Old basic recipe from my grandmother my mother used to make and now my sister makes...and it is put INTO the bird not cooked seperate

Always sausage in there . Even breakfast sausage works

Sharing one of the single greatest recipes - stuffin’ muffins. Make your favorite stuffing. Add a bunch of beaten eggs. Then stuff the stuffing into muffin trays. Bake as you would your regular stuffing. The combination of the eggs + lots of exposed areas for browning + ease of handling at the table = perfection.

I hope no one in 2023 still stuffs the bird with stuffing.

My stuffing recipe. I don’t measure things, so gotta go with the flow:

  • A bunch of carrots, celery, onions, red bell pepper and fennel bulb chopped into small bits. Saute the veggies ahead of time about 5 to 7 minutes to soften up.
  • Two or three baguettes chopped into small crouton-size. Bake at a low temp in sheet pans to remove moisture. use whatever bread suits you.
  • A container of chicken stock or a quart or so go home made stock.
  • A package of good bacon chopped up and par-cooked (cooked about halfway)
  • A package of sweet Italian sausages - casings removed, chopped up and par-cooked.
  • A stick of butter
  • Lots of sage, parsley and fennel fronds - rough chop.
  • Bacon fat
  • About 8 eggs beaten

Feel free to make the ratios of bread, veg and meat to whatever suits you. For me it’s about 4-2-1 (bread, veg meat).

Mix all this up well and stuff tightly into muffin trays. This should be enough for about 24 or so stuffin’ muffins.

The basic stuffing can be made up the night before and then cooked in the oven while the turkey is resting.

A bar/restaurant in Philly, For Pete's Sake, last year had a turkey burger on a homemade stuffing roll 👀 It was incredible!!

One of my votes was the green bean casserole. My family historically makes it with peas instead of green beans. Hmm hmm good. Of course another one of my votes had to go with stuffin. What is Thanksgiving without stuffin.

my sister makes the traditional green bean casserole for thanksgiving but my mother used to make a different variation that relied on alot of mayo and crushed cornflake bit as topping instead of the fried onions. Both varieties are tasty.

I don't like mushrooms in my green bean casserole. It reminds me of rubber balls I chew on.

Serious question - french cut green beans or regular cut? The french tend to be a little longer and skinnier.
 
for the one with mayo/cornflakes it was french cut which were frozen but I believe my sister uses the fresh regular cut for the common one
Thx. We've tried both and tend to like the regular cut better using the old standby Campbells mushroom soup recipe. The french texture tended to be a bit silkier and a little too mushie for our tastes.

Sounds close enough! We also have mac and cheese at our Thanksgiving

No, we do a majority pasta
Still have turkey and some sides, but it's mostly Italian based
Like my FIL says "When you have the best food in the world, why would you want to eat anything else??"
 
I make a sausage stuffing with gravy that is usually everyone’s favorite. But honestly the best TG food is a leftover turkey sandwich with mayo, cranberry sauce, and sausage stuffing on country white bread. I’ll have one on Black Friday for breakfast, for lunch, and for dinner.

PS - mashed rutabagas (wax turnips) are underrated (try them), and don’t forget hot spiced apple cider with a shot of NJ’s own Lairds Apple Jack brandy (from colts neck .. America’s oldest family owned distillery)
 
The turkey heart. And I enjoyed grossing out my brother's in-laws by eating it front of them.
 
As I say every year, I generally don't like Thanksgiving food (love the holiday), as turkey is my least favorite meat (I'll eat it, but it's meh to me) and the only traditional side I like is stuffing which I love. Plenty of times when our son was growing up that we'd do a roast chicken instead of turkey and some of the traditional stuff, which my wife loves and throw in semi-traditional mac-n-cheese for me and our son.

But this year we went to my wife's sister's for TG for the first time (she's much younger than us and got married and had a kid and bought a house in the last 18 months) and she and her husband, who is a quite a good cook, made the best TG dinner I've ever had. They had turkey, stuffing, sweet potatoes, green beans and mashed potatoes for the traditionalists, but also had home-made Bolognese lasagna and slow cooked pork shoulder, both of which were fantastic - so I ate them and the stuffing/mac-n-cheese, which were also awesome. Plus I ate a bunch of the grilled shrimp and shrimp cocktail combo that we brought as an app.

The football games weren't that great yesterday, except for the finish of the Lions-Bears, which was exciting, especially the very end. Who takes 10+ seconds extra and snaps the ball with 6 seconds left and throws a pass on a long developing play that ends the game, with one TO left, instead of snapping quickly and either getting 5-10 more yards for a moderately long FG or taking a deeper shot to try to get much closer (but lower percentage, meaning they might be stuck with a ~58 yard FG at the end which is tough)?

if you do not like turkey, its likely because someone kept overcooking it. My grandmother did used to be make the turkey dry and when my sister took over thanksgiving like 30 years ago, she learned quick on how to make it juicy and moist..
