Why does it take light years for Italian Ices to be scooped??

Anyone remember Grillo's Italian Ice? Terrill Road in Plainfield, near the corner of East Second Street? Little gray wooden shack. Woweee. That was good stuff. Soft, smooth, refreshing. Lemon and Strawberry were my favorites.
How about Ting - A - Ling's in Newark by Branch Brook Park. Amazing Italian Ices.
 
As long as they call it Italian ice and not water ice! Man that gets me nuts. What other ice could it be than water? Liquid nitrogen?

In Staten Island we grew up on Ralphs which serves water and cream ice so the distinction makes sense to me.
