my bad on omitting the mashed potato choice, I actually totally forgot about it since it been phased out of our Thankgiving

I start the tradition of stuffed shells on our Thankgiving menu about 6 years ago...pain in the ass to make those buggers
 
I've always wanted to spatchcock my bird, but have always been a little bit afraid to...now that you've provided a tutorial, I think I'll go ahead and give it a try. I hope it doesn't hurt...

It's easy. Just make sure you have a nice sturdy pair of kitchen shears to do the cutting with. I have used cheap (kitchen aid scissors), expensive (Shun kitchen shears) and "this is not the intended purpose" medical shears. The medical\trauma shears were the best.

Found a good stuffing recipe in an old cookbook a few years ago and brought it to my mom's house, where it was a big hit. Italian-style, with good crusty bread, sausage, red peppers, parmesan ... just had to make sure you let it sit for a while after making it. But damn it is good. And a cranberry/orange relish, too. BIG fan of deep-fried turkey; got a MasterBuilt for it a few years back that works great, except the whole place smells like a KFC for four days afterward.

But stuffing is by far my favorite T-day food, whether it's mine, my mom's or (almost) anyone else's. Just love it.
 
Bump...comparing last years poll...board numbers are way down from last year as you can see way more participation last year..although results look the same....stuffin always wins
