Michigan State Tailgate Menu

How you gonna make the mac-n-cheese bro friendly? Gonna eff up your macros for sure
 
There is a link on the free board about jalapeño Mack and cheese.....maybe that guy can get some for you.
 
Thinking of doing some Jalapeno Chedder Sliders/Burgers and maybe a Jalapeno Bacon Mac N Cheese..any of the hoitee toitee tailgaters from the yellow or blue lot have any recipes for that

Damn that sounds pretty good to me! Not every tailgate me has to be high-end IMHO and this should hit the spot nicely over a long afternoon of drinking.
 
Just put an order in for a 75lb pig this afternoon. Going to roast is early Saturday morning. Working the rest of the menu as I type this. Biggest tailgate of the year for us.

How early? What time you headed to the stadium? At about 225 you have to figure about 1 hr per 10lbs.

We'll probably start it around 6 am. Plan to leave for the Blue lot around 1. Its a quick 10 minute drive for us. We wrap her up pretty good and she stays nice and warm. Then carve her up and into the chafing pans. Presto, pig roast to go!
 
My theme is Spartan meal...Meat and potatoes...cooking up cornish hens (do iit every year, and wasn't wasting my fav. Tailgate food on Kansas) and Rutgers potatoes..(red and white)!! I put a rub of lemon pepper seasoning, then stick a dole pineapple juice can up the keister! Cook em for 1:30-1:45 @ 300° !! Gettin hungry just talking about it!!

They make Mac-n-Cheese in a can now? Good grief...

Or you mean the cheese sauce?

A portion of the meal you're planning will have about 4,800 mgs of sodium in it...lol...it's good to shock the system every once in a while :stuck_out_tongue_winking_eye:

Now all I need to do is come up with the name: Agaist Arky- was Boss Hogg, Michigan last year was Brady!, Uconn- Randy,, Pitt- Dave, Norfolf state- Petey.

Any suggestions!!!

For some reason, I can't get it together this week, so I have no idea what we are making.

I am thinking of brining my cabinet smoker since we will be there awhile. Has anyone used a smoker in the lots before?

That's us. National anthem, shot ski, we do it all!

If you are not arriving until 1pm I guess we'll have to do the National Anthem in the morning this week. We added it to our music list, played it when we tailgated at PSU. (where everyone stood at attention, took their hats off and faced the flag & then cheered afterwards)

We're doing our pig in the lot for OSU when we beat the national champions.

If you don't cook it in the lot - it doesn't count. Almost like you had the thing catered

Knighthound and his crew have the Whitney Houston version, we went along with that version as well.

the Masison Rising version is pretty amazing if you are looking for something different
 
Going with three kinds of ribs this week. One will be my standard, tried and true, and always a big hit. Three racks.

The second will be a smoked version. This is my third version in the smoker, hopefully improving over the last two. Two racks.

The third will also be done in the smoker, but will have an additional sauce added to the above. One rack.

That's my contribution to the tailgate, others will provide beer, etc, sides (though I also do cornbread when I cook ribs), brownies, cookies, etc.

I would prefer a version by the Marine Corps band, but I don't see one on ITunes. You could probably rip a good version from YouTube.

I've heard the tune played about 150,000,000 times in my life. The more poignant versions are instrumental, in my opinion.

I'd have to agree. the trumpet version that they did at Giants stadium last year (the year before?) was amazing. But at a tailgate, where not everyone is always paying attention to the music I think a rendition with vocals is the way to go.
