Going with three kinds of ribs this week. One will be my standard, tried and true, and always a big hit. Three racks.
The second will be a smoked version. This is my third version in the smoker, hopefully improving over the last two. Two racks.
The third will also be done in the smoker, but will have an additional sauce added to the above. One rack.
That's my contribution to the tailgate, others will provide beer, etc, sides (though I also do cornbread when I cook ribs), brownies, cookies, etc.

I've heard the tune played about 150,000,000 times in my life. The more poignant versions are instrumental, in my opinion.

Jimi's rendition is fine. But if I was looking to start a tailgate tradition of sorts, I would be inclined to go in a more classic direction.
We tried the Hendrix version once last year. I'm a big fan personally, but it tends to drag out a little but. And by the end your kind of waiting for it to be over. We got mixed reviews on it. But to each their own.I can respect that. But I want to stand out from the crowd of fellow patriotic Americans. And Iove Hendrix. I wonder what a Led Zep rendition would sound like?
Depending on how much surface area you need, a Weber Kettle works great to smoke. Build an offset, indirect fire and regulate your temp with the top vent. The hinged grate cooking surface makes adding wood chips or chunks fairly easy.
The problem is transporting it unless you have a pick-up. I always knocked the legs off mine to make it more portable. But after a long smoke, it's filthy. I would knock it apart and put the bowl in a heavy duty black garbage bag.
The black garbage bag isnt a bad idea. I assume u need a long cooling down period.
not overly long...dump the remaining coals (once they are out...lol) and mist the kettle with a spray bottle of water. Pat it dry with a paper towel and bag it.
Sunday, give it a proper once over and dry it to prevent rusting.

Disagree w/ kettle-as-smoker at tailgate. Poor form and execution. Tailgate 0-1 this week.
First to smoke ribs or other fatty meat you'd want to keep the lid closed for a long time (at least 5 hours) so you wouldn't be able to use the direct side to cook other things at same time....and there wouldn't be enough room on the indirect side to cook that much food anyway.
Smoke Friday and reheat in foil with beer or vinegar on Saturday, along with other things on same grill or warming rack....

Hudsy....re: a cook off, don't bite off more than you can chew, pun intended. You'd go 0-1 that Saturday, just like Flood most likely will.
It's inadvisable and also inefficient to use the kettle as a smoker at tailgate, especially if one isn't using other grills for other things. And 5 racks is a real stretch.
