Michigan State Tailgate Menu

Looks like the temp will be in the low 60s. I'm probably going to break out the chili. Still deciding on the rest.
 
Going with three kinds of ribs this week. One will be my standard, tried and true, and always a big hit. Three racks.

The second will be a smoked version. This is my third version in the smoker, hopefully improving over the last two. Two racks.

The third will also be done in the smoker, but will have an additional sauce added to the above. One rack.

That's my contribution to the tailgate, others will provide beer, etc, sides (though I also do cornbread when I cook ribs), brownies, cookies, etc.

Are you smoking at the game or precooking?

I would prefer a version by the Marine Corps band, but I don't see one on ITunes. You could probably rip a good version from YouTube.

I've heard the tune played about 150,000,000 times in my life. The more poignant versions are instrumental, in my opinion.

I wasn't even in the military and I agree. It's a march, and should be played as it was written - or close to it - IMHO, not extended, not to outdo the last person, and not to make it about oneself.

Depending on how much surface area you need, a Weber Kettle works great to smoke. Build an offset, indirect fire and regulate your temp with the top vent. The hinged grate cooking surface makes adding wood chips or chunks fairly easy.

The problem is transporting it unless you have a pick-up. I always knocked the legs off mine to make it more portable. But after a long smoke, it's filthy. I would knock it apart and put the bowl in a heavy duty black garbage bag.

Are you making the calzones at the tailgate or buying them and heating them up?
 
I thought you had better taste than that. lol.

Jimi's rendition is fine. But if I was looking to start a tailgate tradition of sorts, I would be inclined to go in a more classic direction.

I can respect that. But I want to stand out from the crowd of fellow patriotic Americans. And Iove Hendrix. I wonder what a Led Zep rendition would sound like?

We tried the Hendrix version once last year. I'm a big fan personally, but it tends to drag out a little but. And by the end your kind of waiting for it to be over. We got mixed reviews on it. But to each their own.
 
Besides the pork roll, egg and cheese on bagels for breakfast along with the tater tots, we are bringing the deep fryer and making fresh fat sandwiches all afternoon and evening long. Who wants a Darrell?!?!?!

The black garbage bag isnt a bad idea. I assume u need a long cooling down period.

not overly long...dump the remaining coals (once they are out...lol) and mist the kettle with a spray bottle of water. Pat it dry with a paper towel and bag it.

Sunday, give it a proper once over and dry it to prevent rusting.

Disagree w/ kettle-as-smoker at tailgate. Poor form and execution. Tailgate 0-1 this week.

First to smoke ribs or other fatty meat you'd want to keep the lid closed for a long time (at least 5 hours) so you wouldn't be able to use the direct side to cook other things at same time....and there wouldn't be enough room on the indirect side to cook that much food anyway.

Smoke Friday and reheat in foil with beer or vinegar on Saturday, along with other things on same grill or warming rack....

I will be doing all of the cooking at home. Two parking passes, 11 people makes things a little tricky. I would LOVE to do the whole day tailgate with cooking in the lot, but it just isn't possible for half the crew, plus transporting equipment.

This is also my first smoker, so I cheated and went electric. I know its not "authentic", but for now, it works.

The conversation is not about building a championship pit. The conversation was about a suitable portable option in the parking lot of a football game.

From a technical standpoint, "keeping the lid closed" means nothing. The best rib, shoulder and whole hog cookers in the world lift the lid on the smoker all the time.

The normal sized Weber kettle is large enough to smoke 5 racks of ribs upright in a rib holder...or 2 shoulders...or 3 chickens.

OP didn't indicate he was cooking for the 101st AIrborne...

I usually do smoke the night before and warm day of at the game.

I thought the idea was good as I would just be using the Weber as a smoker not as the grill. I was going to bring my usual grill as well to cook everything else. My tailgate runs from 6-10 people so I thought it wouldnt be a problem.

As a side note I warm the ribs with apple juice not beer or vinegar if you want to try something different.
 
Yes sometimes I use a.j too wanted to keep the reply simple. There's no good reason to smoke meat at a tailgate if you can do in advance. Always best to keep it simple, prepare suitable grub in advance, etc.

Reheat chili, ribs, s&p etc.

cook high or med-high heat things on site: chops, fish, burgers

5 racks is no more a stretch than one rack if using the upright holder.

And why don't you read the OPs requirements before chiming in with how inefficient it is or isn't.

What exactly is the purpose of a shot ski? Never used one, have seen more people using them. To me they seem like a good way to spill your liquor all over the place...maybe I'm missing something

Had a big problem at homecoming....ordered a pizza and it never came. Advice anyone?
 
We're still working out the menu. But so far, we have:
  • Grilled, marinated sirloin steaks, sliced (possibly w/rolls for steak sandwiches)
  • Satay Chicken
  • Shrimp (or possibly some other seafood thing - yuk)
  • Grilled kielbasa, although I'm looking to shift that to OSU
  • tortellini salad
  • potatoes
Still figuring out salads or veggies and deserts.
